I have always loved the combination of dates with coffee, the sweetness and bitterness combining to make something so decadently delicious. To make them into an unbelievably easy and amazing dessert, I added in some frozen banana and almonds, blitzed it all in a small food processor (I used the Bamix attachment) and in one minute I had a healthy and satisfying way to end my day. I topped it with some chocolate buckinis* (buckwheat, cacao, coconut and goji berry blend) for extra texture but it is as delicious without it too. To make frozen banana, simply peel and chop a banana (or two) and place it in a snap lock bag in the freezer to use when ever you need some creaminess in your ice cream, smoothies or acai bowls. You can also make fantastically healthy and delicious ice cream for kids (or adults) by blitzing frozen banana with any other fresh fruit or a tiny bit of soda water or coconut water.
Banana, Date, Coffee & Almond Ice Cream
1 frozen banana (in pieces)
1 medjool date, pitted
1 shot of espresso
8 raw almonds
*chocolate buckinis – Loving Earth make these. They are available at the Staple Store in Ripponlea or at health food stores
Place everything in a small food processor and blend until combined and creamy. Eat immediately.
