These delicious bars are a perfect breakfast on-the-go or afternoon snack when you need an energy boost. I use a flavourless whey protein powder (available at health food stores). If you want to cut down the amount of rice bran syrup, you can use a combination of dates, tahini, mashed banana or nut butter with the rice bran syrup. You can also substitute maple syrup.
1 cup protein powder
1/3 cup pepitas
1/3 cup sunflower seeds
1/3 cup flaked coconut
2 tbspn chia seeds
2 tbspn poppy seeds
2 tbspn sesame seeds
1/3 cup goji berries and/or cranberries
1 tbspn coconut oil melted
1/2 tspn cinnamon
1/2 jar rice malt syrup (about 1 cup)
Preheat oven to 170C.
Line a 20 x 30cm baking dish with baking paper.
Place everything except the coconut oil and rice malt syrup in a food processor and pulse to combine.
Add the coconut oil and slowly add the rice malt syrup until the mixture holds together when pressed (you may not need all the rice malt syrup).
Place the mixture in the baking dish and use the back of a metal spoon to press it down. If you dip the spoon in water first it is easier as the mixture does not stick to it.
Bake for 20 minutes. Allow to cool and cut into 12 bars.
I place each bar in a snap lock bag and leave them all in the fridge for an easy breakfast or snack on-the-go.
