This is one of my favourite breakfasts – gorgeous raspberry nice cream, spiked with cardamom and tahini, topped with crunchy bits of goodness and fresh berries. Happiness in a bowl!
Raspberry & Tahini Nice Cream
1 banana, peeled, sliced and frozen
1/2 cup frozen raspberries
1/2 tspn ground cardamom
1 or 2 tspns tahini
1/2 tspn vanilla
2 tbspns almond milk

In a small food processor or high speed blender, combine the banana, raspberries, cardamom, tahini, vanilla and milk and pulse until ice cream consistency. You may need to scape down the side and re pulse to get the desired texture.
Place nice cream in a bowl and top with whatever takes your fancy. I love fresh berries, coconut and toasted nuts and seeds.
Don’t feel limited to only make this version. The base of nice cream is frozen banana. To that you can add any other fruit or acai (I find frozen works best) along with any spices, nut butters, maple syrup, dates or flavouring you like. For an extra protein boost in the morning, you can also add a scoop of protein powder into the mix. If you want the nice cream firmer, leave out the milk and if you want it softer, add more milk. Any milk can be used – dairy, nut, soy, rice or coconut.
