Once upon a time, breakfast was a leisurely meal for me, where I might read the paper, have a hot drink on the table and use two hands to hold my cutlery. Fast forward several years and several kids and breakfast is usually a smoothie on the school run. I love smoothies because they are a great way to get a whole lots of fantastic ingredients into you to energise for the day. The extra bonus is that they are delicious and my kids like them too, so I know that everyone is set for breakfast. This is my current favourite – the combination of frozen fruit with coconut milk and water is amazingly creamy, but the tartness of the strawberries and the citrus hints from the lacuma keep it really refreshing. If you are nut free, substitute the cashews with a tablespoon of sunflower seeds butter. Lacuma is a Peruvian ‘superfood’ that is available in powdered for at health food shops. It has a sweet, citrus flavour.
Strawberry & Coconut Breakfast Smoothie
1 cup coconut water
1/4 cup coconut milk
1/2 -1 date (depending on how sweet you like)
1 cup frozen strawberries
1/2 -1 frozen banana (depending on size)
1 tspn vanilla
1 tbspn flax seeds
1 tspn cinnamon
1 tbspn lacuma
a small handful of cashews
Place everything in a high speed blender and blend until smooth and creamy.
