These delightful little bites of deliciousness are the perfect snack when you are craving something sweet and the most wonderful activity to do with kids. Let go of notions of perfection and let the kids enjoy creating their own mini ‘nice cream’ treats. I can’t explain how marvellous the combination of frozen banana, semi sweet chocolate and (my favourite) slivered almonds is. My kids will disagree and say their favourite is a toss up between the 100s & 1000s or cookie crumble. Either way, everyone in my house is happy!
Frozen Banana Bites
4 bananas, peeled and chopped into rounds approximated 1.5cm wide
100g milk chocolate (I use Lindt), chopped into small pieces
100g dark 70% chocolate (I use Lindt), chopped into small pieces
3 tbspn of each 100s & 1000s, toasted slivered almonds, shredded toasted coconut, cacao nibs, and crushed sweet biscuits
Place all the toppings in small bowls.
Slowly, either over a double boiler or in a microwave with reduced power, melt the chocolates together.
Place toothpicks or small wooden forks (available from party shops) into the bananas.
Line some baking trays that will fit into your freezer with baking paper.
Set up a production line of bananas, then chocolate then toppings.
Dip half the banana in melted chocolate and then dip in desired topping.
Place flat on the baking trays and freeze.
Once frozen transfer to a snap lock bag and store in the freezer.
