I am a lover of chocolate and it is invariably my dessert of choice. However, I have this amazing doTerra lemon oil which I use in my water and today I had a hankering to make lemon bliss balls. One of my daughters wanted to help and she loved rolling the mixture into balls and then rolling them in the coconut. Long story short – the result was spectacular. I love them! the kids love them! (And as karma would have it, my kids are fussy eaters hence the exclamation mark). You can use any food grade lemon essential oil. I like doTerra which is available at Glo Health (Glenhuntly Road, Elsternwick). Lacuma is a Peruvian superfood, it is also available at Glo or other health food stores or you can leave it out and still get a brilliant result. A whole new world of dessert options now that I have expanded my horizons beyond chocolate….
Lemon Bliss Balls
3/4 cup macadamias
1 cup cashews
1/3 cup buckwheat
1 tbspn lacuma
1 cup dates, soaked in hot water for 5 minutes
10 drops of lemon oil (I use doTerra)
zest of 1 lemon
juice of half a lemon
pinch of salt
1/2 cup desiccated coconut
zest of half a lemon
Place the macadamias, cashews, buckwheat and lacuma into a food processor and pulse until crumb-like. Add the remaining ingredients and blend until it comes together. Place the mixture in a bowl, cover with glad wrap and refrigerate for half an hour.
Wet the palms of your hand and roll the mixture into balls (about the size of a walnut). Mix the desiccated coconut with the lemon zest and roll the balls to coat them in this mixture. Place in a lined container in the freezer until ready to eat.
