I have a sweet tooth and I like to have something sweet after a meal (or occasionally as a meal). I make these power balls often, using what ever ingredients I have on hand. The basic premise is that you put all of your nuts, seeds, powders and spices in a food processor and blitz until it is crumb-like. Then you add the wet ingredients – dates, nut butters, dried fruit, coconut oil, water, maple syrup, honey – whatever you like, and you continue to blitz and add until the mixture holds together when you press it. Then you roll it into balls, dust them with cacao or roll them in crushed nuts or coconut, pop them in the fridge and you have deliciously decadent orbs of goodness to fuel you when ever you need a pick me up.
Sour Cherry & Chocolate Balls
1 cup raw almonds
3/4 cup raw cashews
1/2 cup pepitas (pumpkin seeds)
1/3 cup coconut flakes
2 or 3 tbspn raw cacao (depending on how bitter you like your chocolate)
1/3 cup sour dried cherries
10 medjool dates, pitted
1/3 cup warm water
Places the nuts, pepitas, coconut and raw cacao in a food processor and blitz til nuts are chopped (I like it slightly coarse). Add the cherries and dates and blitz again. Add enough water to make the mixture wet enough that it holds together when pressed. With damp hands shape into balls. Dust with raw cacao. Store in an airtight container in the fridge or freezer.
