This is such an easy and delicious way to cook salmon. The key ingredient is togarashi – a Japanese spice blend made up of chilli, orange peel, sesame seeds, peppers and seaweed. Add a little honey, soy and fresh lime and you have fabulous fish in a flash. Togarashi is available at Japanese and Asian grocers.
For each fillet of salmon
1 tspn soy, tamari or coconut aminos
1 tspn honey
liberal sprinkling of togarashi
fresh lime wedges
Preheat the oven to 200C. Line a baking dish with silver foil and baking paper (this saves on cleaning up after). Place the salmon skin side down on the baking dish. Drizzle over soy and honey. Season liberally with togarashi. Bake for about 10-12 mins or until cooked to your liking. Serve with fresh lime wedges.
