I love this sweet potato as a side dish or warm salad. It is so easy to make and I always serve it on the chopping board that I prepare it on. It keeps beautifully in the fridge for lunch the next day, and you can also use it in an omelette or a sandwich. Try in in a baguette with some avocado, roast chicken and greens. Delish!
Sweet Potato Chop Chop
2 or 3 sweet potatoes, peeled and cut into 2cm chunks
1 red chill, deseeded and finely chopped
1/2 bunch coriander leaves, chopped
1/2 tspn ground coriander
1/4 tspn ground cumin
1/2 tspn sea salt flakes
juice of half a lemon or lime
3 tbspn olive oil
Steam or microwave the sweet potato until tender. Put the sweet potato on a chopping board. Sprinkle over chilli, coriander, spices and salt. Drizzle over oil and lemon or lime juice. Use a large knife to fold and chop everything all together. Taste and adjust seasoning to your liking. I usually add more salt. Serve warm or cold.
