In an ideal week, I like to do my fruit & vegetable shopping on a Tuesday. This means that on a Monday I like to get rid of what is still in my fridge so I can start afresh. To use up odds and ends as well as anything I have a surplus of, I juice, soup and salad.
This salad is really just a combination of whatever I had in the fridge. Please don’t feel compelled to use the list of ingredients I have – use what you have and what you like. Whatever vegetables you put in, the salad comes together with the addition of spices, seeds, nuts and a zingy dressing. I make a huge bowl of this and then pack half up into containers for lunch the next day with the dressing in small containers next to it. If you want to add protein, boiled eggs, canned tuna, cooked salmon or shredded chicken all work well for a fantastic lunch or dinner.
(And for those who are interested and get the same satisfaction as I do from seeing an empty fridge before a full one, the juice today was pear, lemon, kiwi, ginger, spinach, celery and cucumber, and my go to soup is the spicy vegetable and lentil one which you can find on this website).
The Everything Salad
half a bunch of kale, leaves only, shredded (or lettuce, spinach or any other leafy green)
1 carrot, diced
2 sticks celery, diced
a bunch of radishes, sliced or diced
a handful of green beans, chopped
a packet of sprouts (I used a combo of mung beans, alfalfa and snow pea sprouts)
2 lebanese cucumbers, diced
1 capsicum, diced
1 avocado, diced
a handful of snow peas, sliced
a handful of parsley, chopped
a handful of mint, chopped
1 tspn cinnamon
1 tbspn sumac
1 tbspn toasted sesame seeds
a small handful of pepitas
a handful of roast almonds, chopped
juice of 1 lemon
1/4 cup olive oil
1 tbspn apple cider or white balsamic vinegar
a big pinch salt
1 heaped tspn dijon mustard
1 tspn honey or maple syrup
Combine ingredients for dressing in a jar. Shake. Taste and adjust if necessary.
Place all salad ingredients in a large bowl. Mix to combine. Take out some for lunch the next day (it really makes healthy eating so much easier if you already have something prepared when you are hungry). Pour over the dressing and toss to combine again.
